You can leave it natural, stain it, or even paint it to give you the look you want. The difference between the two products is that shiplap panels overlap while tongue and groove panels interlock.
Adding beams to a drywalled ceiling or even a tongue and groove or shiplap ceiling can give you a rustic, warm feeling for that room.
If you are going for a more classic look, one that has a wow feature, than maybe a tray ceiling or a coffered ceiling is for you. What's the difference between the two? A tray ceiling features a single raised area that mimics your room shape while a coffered ceiling has many recessed areas, usually in a grid shape.
